GREEN BEAN AND DILL SALAD

The perfect salad to bring on the season of entertaining. This simple yet sensational salad is delicious enough to be a crowd favourite yet easy enough as a weeknight dinner side. Enjoy this salad hot, cold or at room temperature.

INGREDIENTS:

  • 500 g green beans
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons vinegar
  • ¼ teaspoon black pepper
  • ½ teaspoon salt
  • ¼ cup olive oil
  • ½ cup fresh dill chopped
Green bean and dill salad

 

METHOD:

  1. Trim the ends of the green beans.
  2. Bring a large pot of water to a rolling boil. Add 1 tablespoon of salt to the water. Add the green beans to the boiling water and cook for two minutes.
  3. Remove from the pot from the heat and place the green beans in a prepared bowl of cold water to maintain the beans vibrant colour and crunchy texture.
  4. In a small bowl whisk together the mustard, vinegar, black pepper, salt, olive oil and dill.
  5. Toss the cooked green beans with the dressing to combine and enjoy!
